OUR STORY

Nestled in the heart of Downtown Orillia, Couchiching Craft Brewing Co. stands as the quintessential destination for those seeking a rich craft experience unlike any other.

HISTORY

With roots extending back to the early 20th century, our building's history has played an important role in downtown Orillia.

Once home to local establishments such as

  • Blacksmith Blacker Joe (1880)

  • McKay and Co Woolen Mill (1888)

  • Holmes & Church Livery and Stables (1906)

  • H R J Holmes & Son Auto Dealers (1930)

  • York Trading Co LTD (1937)

  • Borden Co. LTD's Ice Cream Manufacturing (1942)

  • Askett Printing (1960)

We are honoured to continue to provide downtown Orillia with quality products and services and recognize the history of the men and women who have stood before us. 

THE RENOVATION

In an extensive renovation spanning 2018-2020, our shareholders were on a mission to preserve the soul of this historic structure.

​

Some of the original brick walls stand proudly, whispering stories of days gone by. Many of our wooden table tops, bar siding, and hardwood floors are reincarnated from the sturdy elm wood that once graced the building's facade.

​

Wood, brick, and even graffiti from the early 1900s have been preserved to celebrate the growth and perseverance of the building and its people before us. 

Our commitment to preserving heritage is not merely architectural but extends to honouring and giving respect for the hard work and dedication of early downtown businesses. 

THE FIRST 4 YEARS

Our cutting-edge production system allows us to brew both large and small-scale batches of award-winning craft beer.

The Taproom offered a full eat-in and bar experience which extended to our patio - one of the largest in Downtown Orillia. Red Seal Chef, Nick, transforms local and fresh ingredients into delectable bites that pair perfectly with our selection of beer, wine, and cocktails.

 

As a passionate member of our community, we are proud to partner with many local organizations for special events and festivals as we enjoy promoting and celebrating all things Orillia!

THE MERGER

In late 2024, we announced exciting new chapter as we merged with our Mississaga St. neighbours, the iconic Brewery Bay Food Co. In a mere couple of months, Brewery Bay moved from their residence of over 30 years - a mercifully short distance of 100 meters downhill - into our restaurant space, bringing together both amazing teams and a selection of menu favourites from both kitchens.

The merger also served as an opportunity for Brewery Bay's original owner Steve to retire, though it remains a family affair with his daughter Jenna French (also owner-operator of Rustica Pizza Vino) stepping in as managing partner of the newly merged company.

​

While the name on the restaurant is no longer CCBC, the heart, soul, and craft brewery are all the same - and all dozen taps continue to pour our beer.
